Radicchio

Vor Weihnachten habe ich in einem italienischen Supermarkt diesen norditalienischen, krakenartigen Radicchio gesehen und gekauft (obwohl davon nichts auf dem Einkaufszettel stand). Vor Jahren hatte ich in einer TV-Kochdoku Risotto damit gesehen. Ich habe dann ein sehr gradliniges ergoogeltes Rezept um eine halbe Quitte ergänzt und mit Mirin und Weißweinessig statt Weißwein (den ich dafür zu schade fand) abgelöscht. ging.

Before Christmas, I saw this northern Italian octopus-like radicchio in an Italian supermarket and bought it (although nothing about it was on the shopping list). Years ago, I had seen risotto made with it in a TV cooking documentary. I then added half a quince to a very straightforward Googled recipe and deglazed it with mirin and white wine vinegar instead of white wine (which I did not want to spoil for that).
